Tightly wound stony fruit, lovely bright acidity and mineral infused texture are the hallmarks here, everything you could want in a white from this classic region of France! It is essentially unoaked, aged in neutral barrels except for a couple of new replacements each year. Kick around in the stony vineyards of the Chablis region and what you'll find are fossils - lots of them! Formed as an ancient seafloor over 180 million years ago in the Upper Jurassic period, this calcareous soil called Kimmeridge Clay plays a big role in the style of Chablis.

The region’s location in northwestern France, with a climate more akin to that of Champagne or Sancerre than the rest of Burgundy, is the second piece of the Chablis puzzle. It is a somewhat isolated area, with the best sites, Premier and Grand Crus, found along the slopes above the Serein river on Kimmeridge soils, Petit Chablis and some of the village sites mixed with Portlandian, a similar but younger soil. It’s about an hour and a half drive from Beaune, and while considered part of Burgundy it is kind of its own unique entity, separated from the rest of the region by geology and climate. While it can get warm in peak summer, winters are cold, and freezing and frost can be an issue well into the spring, posing a constant threat to the vines. Generally it is a cool, slow growing season that results in the focused crisp intensity of the chardonnay grapes grown here.

When traveling to Burgundy on buying trips, Chablis is usually my first stop - arriving for a quick lunch and visit with a few producers after the overnight flight and a groggy early morning arrival. There is something about that mouthwatering first taste - flinty, stony, mineral, crisp and intense, that wakes up your palate and says clearly “you are back in Burgundy!” Buy a couple bottles today and bring a little bit of France to your table!
