The wine is aged in the cellars of the church in previously-used French oak barrels (15% new oak) for 18 months, before being bottled. On the nose, the wine releases pronounced aromas of crunchy red fruit. Powerful yet supple on the palate with smooth, coated tannins. The oak is well integrated with the fruit, adding complexity to the wine.
Maison Jaffelin was founded in 1816 and is the smallest of the great Burgundy houses, famed for its hand-crafted wines that slumber in the great medieval cellars of Beaune’s Notre Dame Collegiate Church. It also stands out as being the only producer still operating in the center of the historic town of Beaune.
The grapes come from the plots all over Burgundy and the work focuses on capturing the characteristics of the various terroirs. An array of vineyard plots throughout Burgundy provides Maison Jaffelin with the opportunity to produce a wider variety of wines than most. Winemaking is led by a young woman, Marinette Garnier, who, despite her age, has already obtained valuable experience at other prestigious wine houses and domaines.
