Pierre Paillard is a grower Champagne producer with 200 years of family winemaking and eight generations under its belt. The family’s roots are from the Grand Cru village of Bouzy located at the southern slopes of the Montagne de Reims. Brothers Quentin and Antoine carry on their family’s legacy by making farming top priority. There is an immense focus on the fruit, as they strengthen the vines by encouraging the flora and fauna around them. With fruit of this caliber, there is less reason to intervene in the cellar. Their is very little done to the wine beyond extended lees aging, and the results are Champagnes exuding intensity and elegance.
A unique style of Champagne, this is made with mostly Chardonnay and Pinot Noir, with 5% coming from a still red, known locally as Coteaux Champenois. The fruit all comes from their own Grand Cru sites within the village of Bouzy. This, like the other wines, undergoes extended lees aging of three years before release.
