Terroir: 2.47 acres (1 hectare) of 25-year-old vines and a yield of 3.70 tons/acre (50hL/hectare). Since 2019, Mr. Olivier Foucher has chosen to vinify this special Silex (flint) soil separately to make a single-plot cuvée (parcellaire). The Silex terroir brings a lot of minerality into the wine
Vinification: As a smaller yield, the wine is vinified in thermoregulated stainless steel vats, then a long aging in vats (about 6/7 months)
Tasting Notes: Nose is fresh with minerality, flint and smoky notes as well as white flowers but also yellow fruits: peach & ripe mango. The attack is fresh with a beautiful aromatic return on the minerality but also the floral notes and the notes of foliage. Aromas of white fruits complete the whole. The structure is supple with a beautiful bitterness that brings length
Food Pairing: This is an exceptional seafood wine — think oysters, scallops, smoked trout, shellfish — but it is also perfect for a salad of fresh greens with apples, goat cheese and walnuts
