Wine obtained from a blend of Chardonnay, Petit Manseng, Trebbiano, Semillon and Sauvignon Blanc grapes. All varieties grown by us in the coolest areas of the farm. The harvest is manual and takes place for Chardonnay, Semillon and Sauvignon Blanc at the end of August while Trebbiano and Petit Manseng in the second part of September. The grapes are cooled before being pressed whole, the must settles for 24 hours before being decanted and fermentation begins. Fermentation takes place between 15°C and 18°C, slowly to preserve its aromas. The wine obtained is then kept on the fine lees for 4-5 months, it does not undergo malolactic fermentation.
The nose is rich in white flowers and citrus fruits. A good concentration of fruit and a fresh acidity make it an excellent accompaniment for grilled fish, chicken or a fresh aperitif.
