The Barolo “Riva Rocca” offers characteristic hints of dried rose, mixed with notes of mint and licorice. The taste of this Barolo is full-bodied and on the same time same harmonic due to the presence of sweets and elegant tannins dictated by the wood and well supported by his structure.
The Barolo “Riva Rocca” has been produced since 1995 in the village of Verduno particularly suited to cultivation of vineyards from Barolo. The exhibition of our vineyard is south-west and the age of the plants exceeds the 30 years.
The yield of the grapes in the vineyard is about one kilo per plant; while the total production is 4000 bottles per every hectare. The grapes, after being harvested, come pressed and fermented for a week with rigorous temperature control. The wine obtained is put into French oak barriques where another fermentation takes place: the malolactic fermentation. The wine is put in French oak barrels for 24 months. Follow 12 months of ageing in large French oak barrels and 12 months in the bottle.
