Jean Cave Description

Jean Cave is a small family style Armagnac producer from Lannepax, a small village of 500 inhabitants in the Bas- Armagnac region. Jean Cavé opened the doors of his small distillery in 1883. The team at Jean Cavé is still guided by Henry Cavé, the fourth generation of the family. With Henry at the helm, the distillery benefits from generations of knowledge, as well as a shared sense of tradition and purpose.

For the aging process at Jean Cavé, they use brand new oak barrels for the very first years of aging. After 18 months and up to 36 months, the Armagnac will get a high content of tannins. It will get a nice amber color and the woody and vanilla flavors they need for the aging before being transferred to older barrels, which will take care of the long aging and evolution of aromas.. Jean Cavé invests every year in almost 200 brand new oak barrels for this purpose. Their partners for oak barrels come from the Southwest of France and are named Bartholomo (60%) and Tonnellerie de l’Adour (40%). They work exclusively with French oak, mainly from Southwest of France and a little bit from the Limousin region,in the center.

The Jean Cavé cellar in Lannepax is on two levels: a ground level with barrels on beaten earth/dirt floor, with a high level of humidity. This is where they age the youngest Armagnac. The beaten earth allows this part of the cellar to keep enough humidity to limit the evaporation process. The other level is dedicated to the vintages area (the oldest are kept in glass jars) in a dry atmosphere Jean Cave over the years as acquired one of the most spectacular collections of Vintage Armagnacs ranging from 1883 to 2009.
