Long ago, Jacoulot distiller Philippe Vancon realized that there exists an affinity between Scotch Whisky & Brandy from Burgundy. These two styles of spirits have many simliar philosophies, including the importance of source and the maturation climate. This understanding birthed a project to marry Scotch Whisky and Brandy from Burgundy.
First water; The water source is a fundamental factor in the profile for Scotch Whisky. Philippe sought to partner with a distillery that crafted a whisky that would blend well with his casks and came upon Tullibardine in the Highlands. The distillery started out as a brewery in thr 15th Century due to its revered water source from the Ochil Hills that takes 15 years to reach the final resting point. This pristine water, paired with the distillery's clean style of Highland whisky, seemed an ideal complement to Philippe's vision.
The whisky spends nine and a half years maturing in a selection of ex-Bourbon casks, chosen by Philippe, and then spent an additonal two and a half years finishing in Jacoulot's ex-Marc de Bourgogne barrels. Distilled in 2007, bottled in 2020. Only 276 bottle produced. 40% abv
Tasting Notes: Baking spices and soft cereal grains intertwine with baked apples and salted caramel
Oak-barrel aging is a traditional know-how that inspires the Jacoulot style: Unique combination of a great aromatic complexity and a superb finesse. The house expertise shows through this Highland single malt aged in Scotland in our very own barrels which were until then used for aging our famous Marcs de Bourgogne. This Jacoulot finish makes those rare and exceptional single malts sublime.
