This mezcal is made using traditional production methods that have been passed down through generations of mezcaleros in the region. The name Pechuga comes from the Spanish word for "breast," as this type of mezcal is traditionally made by hanging a raw chicken breast above the distillation pot during the final distillation. The steam from the cooking mezcal infuses the chicken breast with flavor, which is then distilled along with the mezcal to create a unique and complex flavor profile. This Pechuga does not use chicken, but Turkey, Venison, Iguana, Rabbit and tons of different fruits, nuts and spices!

Don Mateo De la Sierra Pechuga Mezcal is made from 100% Cupreata agave, which is cooked in an underground pit oven and then crushed using a traditional stone mill. The resulting juice is fermented using naturally occurring yeasts before being distilled twice in copper alembic stills. During the final distillation, the turkey, venison, iguana, rabbit and all the fruits, nuts & spices are hung above the still to infuse the mezcal with its unique flavor.

The nose of Don Mateo De la Sierra Pechuga Mezcal is rich and complex, with notes of cooked agave, smoke, and roasted meat, as well as a hint of fruit and spice. On the palate, the mezcal is smooth and full-bodied, with flavors of caramel, vanilla, and a subtle smokiness that lingers on the finish.

Don Mateo Alto mezcal comes from Cupreata agave that is approximately 6-8 years old. It has cereal organoleptic notes with tones of pineapple and lime. Distilled with Turkey Breast, Venison, Iguana, Rabbit and more than 20 ingredients; under the secret recipe of Master Mezcalera María Delia Vargas. Ideal to drink alone, or accompanied by white meats.
