Siembra Valles presents the other distinct and traditional tequila-producing region of Jalisco, the lowland valley (valles). Made in collaboration with the Rosales family at the iconic Destileria Cascahuín, single estate agave is grown to maturity in volcanic soil, then harvested by hand. Primarily cooked using a traditional brick oven, the Valles line also features limited releases of tequila cooked using the historic method of earthen pit oven, common in most artesanal mezcal, connecting the dots clearly between modern tequila and its forebear, Vino de Mezcal de Tequila.
Siembra Valles: Volcanic soil. Rainy Summers. Commanding, earthy tequilas.
Siembra Valles is born of the “Lowlands” of Jalisco, where expert jimadores manage volcanic soil and rainy summers to produce commanding, earthy tequilas. Produced at the historic, family-owned Destilería Cascahuín, Siembra Valles tequilas are an experience in traditional productions and terroir in agave.
This peppery Lowlands Blanco boasts the region’s famous volcanic minerality. It’s unmistakably Valles, and is favored by bartenders for its versatility and character, but also smooth and complex enough to sip. Jimador Manuel Romero harvests agave for Siembra Valles, with Cascahuín mountain in the background. Cascahuín means “hill of light,” as the mountain attracts lightning from passing storms. It’s the defining topographical feature of the region, and all Siembra Valles tequilas are distilled at family-owned Destileria Cascahuín. We embrace traditional methods and reject additives and shortcuts. We hope you enjoy the result.
