This Pinot Noir is crafted from grapes from several Finger Lakes vineyards, including our limestone rich Estate vineyard. Cherries, chalk and earth on the nose. Tart cherries continue on the palate along with hints of cranberry, followed by a long, satisfying finish with medium tannins. Drinking beautifully already!
The hand-picked grapes were received in small individual picking lugs. The grapes were then optically-sorted into one ton bins for a 50% whole-cluster fermentation. Fermentation lasted for an average of 15 days, after which point the grapes were basket pressed and gently transferred using gravity flow methods into barrels for 11 months of aging.
