This plot, "Les Saumonts," is located on a hillside at the foot of a cliff. It owes its name to this particularity, as "saumonts" means "under the mountain," hence its name. Our plot, all Pinot Noir, was planted in 2016. It covers 2.01 hectares and faces due south. The vines grow on stony clay-limestone soil made from debris from the disintegrated rock coming from the cliff.
Hand-harvested throughout the estate. 100% destemming of our Pinot Noir grapes. Long vatting period, approximately 2 to 3 weeks, with fermentation using native yeast to preserve the vintage's distinctive character. Gentle extraction, based on pumping over and only a few punching downs.
Aged for 12 months in oak barrels, with approximately 10 to 15% new oak. An additional 6 months in stainless steel vats.
